Tahini Kale Salad Recipe

Ingredients:

  • 1 bunch of kale (8 cups), chopped

  • 1/4 cup tahini

  • 2 tbsp lemon juice

  • 1 tbsp apple cider vinegar

  • 1 tbsp soy sauce or tamari

  • 1 tbsp maple syrup or honey

  • 1-2 cloves garlic, minced

  • 2-3 tbsp water (optional, to thin dressing)

  • Salt and pepper to taste

  • 1/4 cup nutritional yeast (optional)

  • 1/4 cup roasted sunflower seeds (optional)

 

Instructions:

  1. Prep the Kale: Remove stems, chop leaves, and place in a large bowl.

  2. Make the Dressing: Whisk tahini, lemon juice, apple cider vinegar, soy sauce, maple syrup, and garlic. Thin with water if needed.

  3. Combine: Massage dressing into kale leaves to soften them.
